Recipe ingredients

  • Enough salted water
  • 1/2 tsp. (2 mL) thyme
  • 4 fresh live lobsters, 1 lb (450 g) each
  • 1 tsp. (5 mL) parsley
  • To taste salt
  • To taste melted unsalted butter*
  • 2 Tbsp. (30 mL) breadcrumbs*

Preparation

Preheat oven to 450°F/230°C.
Bring salted water to a boil in a deep pot with the thyme.
Plunge lobster in the liquid and bring to a boil again.
Cook until shell turns red. Allow 5 minutes from the time the water returns to a full boil for the first pound and 1 minute for each additional 1/2 pound.
Remove lobster with a skimmer or tongs and drain. Split the lobster in half lengthways and carefully remove the meat.
Wipe half shells and pour in a little melted butter.
Return meat to shells, salt, drizzle with melted butter and sprinkle with breadcrumbs.
Broil at 230°C/450°F 5 minutes or until lightly browned.

Suggestion

Substitute seaweed for salt in the water.
