Recipe ingredients

  • 4 fresh salmon steaks, 5 to 7 oz (150 g to 200 g) each
  • Marinade
  • 1/2 cup (125 mL) extra virgin olive oil*
  • 1/4 cup (60 mL) lemon juice
  • 1/4 cup (60 mL) white vermouth
  • 2 Tbsp. (30 mL) grated onion

  • 1 tsp. (5 mL) dried tarragon
  • 1/2 tsp. (2 mL) powdered mustard
  • Salt and pepper to taste.

Preparation

In a glass bowl, mix marinade ingredients together. Reserve part.
Place salmon steaks in remaining marinade, coating them well. Cover and refrigerate for 1 hr.
