Recipe ingredients

  • 4 fresh salmon fillets, 5 to 7 oz (150 g to 200 g) each
  • Sauce
  • 3 Tbsp. (45 mL) unsalted butter*
  • 1 Tbsp. (15 mL) lime juice
  • 1 Tbsp. (15 mL) capers
  • 1 Tbsp. (15 mL) chopped fresh tarragon
  • 1/2 cup (125 mL) roasted crushed pistachio nuts .

Preparation

Preheat barbecue to medium heat.
In a saucepan, mix pistachio sauce ingredients, bring to a boil and cook for 1 to 2 minutes.
Baste salmon fillets with pistachio sauce and place in a grill basket.
Cook on the grill. Normally, 2 to 3 minutes per side should be sufficient.

Suggestion

Red coloured pistachios are not recommended for cooking.
