Recipe ingredients
- 4 fresh salmon fillets, 5 to 7 oz (150 g to 200 g) each
- Mixture
- 2 Tbsp. (30 mL) extra virgin olive oil*
- 3 Tbsp. (45 mL) Dijon mustard*
- Plum Coriander Sauce
- 2 Tbsp. (30 mL) extra virgin olive oil*
- 3 Tbsp. (45 mL) lemon juice
- 1 tsp. (5 mL) curry powder
- 2 tsp. (10 mL) fresh grated ginger
- 1/2 cup (125 mL) chicken broth*
- 3 Tbsp. (45 mL) sugar
- 4 fresh or canned plums, halved
- 1 Tbsp. (15 mL) chopped fresh coriander .
Preparation
Preheat barbecue to medium heat.
In a saucepan, mix sauce ingredients, except for coriander, bring to a boil and simmer for 1 to 2 minutes. Remove from heat, add coriander and set aside.
In a glass bowl, mix basting mixture ingredients together.
Baste salmon fillets and place in a grill basket.
Cook on the grill. Normally, 2 to 3 minutes per side should be sufficient.
Top the fillets with plum coriander sauce and serve.
Suggestion
The sauce can be thickened with 15 mL (1 tbsp.) of cornstarch mixed with water.* We recommend Selection and Irresistibles products.
