Recipe ingredients

  • 4 fresh trout fillets, 4 to 5 oz (120 g to 150 g) each
  • 1 Tbsp. (15 mL) extra virgin olive oil*
  • 2 Tbsp. (30 mL) all-purpose flour*
  • Salt and pepper to taste .

Preparation

Preheat barbecue to medium heat.
Baste fillets with olive oil.
Sprinkle with flour and season to taste.
Cook on covered barbecue. Normally, 2 to 3 minutes per side should be sufficient.

Suggestion

Fatty fish like trout is ideal for barbecuing because natural juices keep the flesh tender.
