Recipe ingredients
- 4 whole trout, without the head, 8 to 10 oz (240 g to 300 g) each
- 2 Tbsp. (30 mL) unsalted melted butter*
- 2 Tbsp. (30 mL) Irresistibles extra virgin olive oil*
- 1/4 cup (60 mL) chopped fresh dill
- Cheese Sauce
- 1/4 cup (60 mL) chopped fresh coriander
- 1/4 cup (60 mL) Irresistibles unsweetened orange juice*
- 2 Tbsp. (30 mL) brown sugar*
- 1 Tbsp. (15 mL) grated peel of sweet lime and orange
- 1 Tbsp (15 mL) grated ginger
- 1 cup (250 mL) grated Mozzarella cheese
- Salt and pepper to taste .
Preparation
Preheat the oven at 375°F (190°C).
Pat trout dry. Season insides
Preheat barbecue to medium heat.
In a saucepan, mix cheese sauce ingredients together. Bring to a boil and simmer for 2 minutes. Set aside and keep warm.
In a bowl, mix butter, oil and fresh dill..
Baste with mixture.
In a pan, place the trouts and bake 12 to 14 minutes per inch 2.5cm of thickness
On barbecue
In grill basket, place the trouts.
Cook trout on covered barbecue, 12 to 14 minutes per inch (2.5cm) of thickness.
Cover plates with cheese sauce and place grilled trout on top.
Suggestion
