Recipe ingredients

  • 16 jumbo shrimps, shell-on
  • 2 avocados, diced
  • 2 star fruits, sliced
  • Marinade
  • 3 Tbsp. (45 mL) lemon juice
  • 1 cup (250 mL) garlic and chive dressing *
  • 3 Tbsp. (45 mL) white wine
  • 1/4 cup (60 mL) plain low-fat yogurt (2%) *
  • 2 Tbsp. (30 mL) fresh dill, chopped
  • 1/4 cup (60 mL) chili sauce *
  • Salt and pepper to taste

Preparation

Preheat barbecue to medium heat.
Thread ingredients onto 4 brochettes, alternating them. Place in glass dish and set aside.
Mix sauce ingredients In a bowl and pour over brochettes.
Place brochettes in grill basket and barbecue for 2 to 3 minutes, turning frequently.

Suggestion

Shrimp can be cooked with or without the shell. Keeping the shell on keeps flesh moist; cooking without the shell gives the flesh a dryer texture.
