Recipe ingredients

  • Enough salted water: 1 Tbsp. (15 mL) of salt per 4 cups (1 L) of water
  • 4 fresh live lobster 1 lb. (450 g) each
  • 1/2 cup (125 mL) lime juice
  • 1/4 cup (60 mL) Irresistible extra virgin olive oil *
  • 2 tsp. (10 mL) grated lime peel
  • 1/4 tsp. (1 mL) Irresistible pepper*
  • 1/2 cup (125 mL) unsalted melted butter *

Preparation

In a large pot, bring salted water to a boil.
Put lobster in and bring to a boil.
Cook until shells turn red. Once water comes to a boil again, count 5 minutes for one pound ( 454 g) and one minute for each additional 1/2 pound ( 227 g).
Remove lobster with a skimmer or tongs and drain. Cut lobster in two lengthways and set aside.
Mix marinade ingredients in a glass bowl. Baste lobster flesh with mixture, cover and refrigerate for 30 minutes.
Preheat barbecue to medium heat.
Remove lobster from marinade and drain.
Place lobster on oiled grill, cut part down.
Grilled for 5 to 6 minutes or until lobster is hot.

Suggestion

Poached lobster must be boiled in a copper or enamel pot. Iron pots turn the flesh of shellfish black.
