Recipe ingredients

  • Stuffing
  • 1 lb. (450 g) sausage meat
  • 1 Tbsp. (15 mL) butter
  • 1 Tbsp. (15 mL) oil
  • 1 cup (250 mL) minced mushrooms
  • 1 medium onion, chopped
  • 1 cup (250 mL) diced dry white bread
  • 2 cups (500 mL) minced dried apricots
  • 1 tsp. poultry seasoning
  • 1 cups (250 mL) chicken bouillon*
  • 3 to 4 kg fresh turkey

Preparation

Brown sausage meat in oil and butter. Remove and cool.
In the same frying pan, sauté mushrooms and onions until onions are glassy.
In a glass bowl, combine remaining stuffing ingredients, except chicken bouillon, with the cooled sausage meat. Cool stuffing thoroughly in the refrigerator before stuffing the turkey.
Preheat the oven to 180ºC/350ºF.
Stuff turkey with cooled stuffing.
Roast at 180ºC/350ºF allowing 55 to 60 minutes per kg (25 to 30 minutes per lb.).
