Recipe ingredients
- 1 Tbsp. (15 mL) butter
- 1 Tbsp. (15 mL) oil
- 4 fresh chicken cutlets, 4 to 5 oz. (120 to 150 g) each
- 2 green onions, chopped
- 1/4 tsp. (1 mL) chopped fresh oregano
- Salt and pepper to taste
- 1/2 cup (125 mL) grapefruit juice*
- 1/2 cup (125 mL) cranberry juice*
Preparation
In a frying pan, brown cutlets in oil and butter 1 to 2 minutes.
Add onions and oregano. Season and cook 2 to 3 minutes.
Add fruit juices. Bring to a boil and cook covered 5 minutes.
Remove chicken from the sauce and keep warm.
Reduce cooking juices to sauce consistency.
Suggestion
For greater taste and tenderness, marinate cutlets in a marinade of soya sauce, lemon juice, maple syrup, olive oil and fresh coriander 30 minutes before cooking.* We recommend Selection and Irresistibles products.
