Recipe ingredients
- 3 medium eggplants
- 3/4 lb. (350 g) cooked ham, thinly sliced
- 1/2 lb. (225 g) mozzarella cheese cut into cubes
- 1/4 lb. (115 g) parmiggiano reggiano, grated
- Sufficient quantity. extra virgin olive oil
- 3 Tbsp. (45 mL) tomato sauce
- Sufficient quantity, all-purpose flour
- Salt to taste
Preparation
Wash the eggplants.Cut into thin slices and soak in water for about 15 minutes. Dry thoroughly.
Preheat the oven to 190ºC/375ºF.
Put a slice of ham and a few cubes of Mozzarella on each slice of eggplant.
Roll them all together and close with a toothpick.
Put the rolls in an ovenproof pan and baste with the tomato sauce.
Sprinkle with the Parmigianno Reggiano cheese and add a little melted butter.
Cook in the oven at 190ºC/375ºF for about 15 minutes.
Suggestion
Soaking the eggplants in cold water eliminates their bitter juices. This is not always necessary since the bitterness of eggplants varies.* We recommend Selection and Irresistibles products.
