Recipe ingredients
- 4 strips streaky bacon, cubed
- 4 quails
- 1 cup (250 mL) pineapple juice
- 12 pitted plums *
- 1 cup (250 mL) pineapple chunks *
- 1 clove garlic
- 1 sprig thyme
- 1 sprig rosemary
Preparation
Blanch streaky bacon in a saucepan of water and drain.
Fry streaky bacon until golden brown.
Add quail to pan and brown on all sides. Set aside.
Deglaze with pineapple juice. Add remaining ingredients.
Return quail to pan and cover.
Cook 20 to 25 minutes over low heat or in a 350ºF/180ºC oven.
Suggestion
Quail will hold their shape while cooking if you make a slit in one thigh and insert the other leg through the slit.Occasion: Christimas Holidays
