Recipe ingredients

  • 8 fresh boneless, skinless chicken thighs
  • Summer Stuffing
  • 1/4 cup (60 mL) grated carrots
  • 1/2 cup (125 mL) julienned zucchini and peppers
  • 1 medium onion, chopped
  • 1/2 cup (125 mL) plain breadcrumbs*
  • 1 lemon, zest and juice
  • 1/2 tsp. (2 mL) chicken seasoning
  • 2 Tbsp. (30 mL) chicken concentrate
  • Salt and pepper to taste

Preparation

Preheat the barbecue to medium heat.
Mix stuffing ingredients together in a bowl.
Place stuffing in centre of each chicken thigh, fold meat over it and close with a toothpick or a small wooden skewer. Cover and let stand for 15 minutes in the refrigerator.
Place chicken thighs on a sheet of oiled aluminium foil and barbecue 6 to 8 minutes per side.

Suggestion

For a Mediterranean flavoured stuffing, replace the carrots with minced eggplant.
