Recipe ingredients

  • 8 boneless, skinless chicken thighs
  • Tangerine Basting Sauce
  • 1 cup (250 mL) canned tangerine sections
  • 1 cup (250 mL) canned litchi fruit in its syrup
  • 1 scallion, minced
  • 1/2 tsp. (2 mL) Tabasco sauce
  • 2 Tbsp. (30 mL) raspberry vinegar
  • 3 Tbsp. (45 mL) chicken concentrate
  • Salt and pepper to taste

Preparation

Preheat the barbecue to medium-high heat.
In a pan, bring sauce ingredients to a boil and cook for 1 to 2 minutes. Set half of the sauce aside.
Place chicken thighs on a sheet of oiled aluminium foil.
Baste chicken thighs with remaining sauce and barbecue 5 to 7 minutes per side.
Top chicken thighs with reserved sauce.

Suggestion

If desired, thicken the sauce with 30 mL (2 tbsp.) of cornstarch mixed with cold water.
