Recipe ingredients
- 4 fresh boneless chicken breasts, 4 to 5 oz. (120 to 150 g) each Stuffing
- 2 Tbsp. (30 mL) extra virgin olive oil
- 1 green apple, cut in pieces
- 2 Tbsp. (30 mL) lemon juice
- 2 slices white bread, cut in pieces
- 1 Tbsp. (15 mL) chicken concentrate
- 1/2 cup (125 mL) canned pineapple pieces
- 1 medium egg
- 1/2 cup (125 mL) raisins
- 1 tsp. Cayenne (5 mL cayenne) pepper
Preparation
Preheat the barbecue to medium heat.
Mix stuffing ingredients together in a mixer.
Make a pocket in the centre of each chicken breast, fill with stuffing, close with a toothpick or a small wooden skewer.
Place stuffed chicken breasts on a sheet of oiled aluminium foil and barbecue 10 to 15 minutes.
Suggestion
Vary the flavour by replacing the raisins with any other dried, chopped fruit (prunes, apricots, figs, dates or a mixture of dried fruits).* We recommend Selection and Irresistibles products.
