Recipe ingredients
- 4 fresh boneless chicken breasts, 4 to 5 oz. (120 to 150 g) each
- Peanut Sauce
- 1 medium onion, chopped
- 1/3 cup (80 mL) peanut butter
- 2 Tbsp. (30 mL) Tamari sauce
- 1/4 cup (60 mL) 2% milk
- 1/3 cup (80 mL) reconstituted chicken broth
- 2 Tbsp. (30 mL) corn syrup
- 1 tsp. (5 mL) Cayenne pepper
Preparation
Preheat the barbecue to medium heat.
In a pan, brown the onion in a butter/oil mixture. Add remaining sauce ingredients and bring to a boil. Cook for 1 to 2 minutes. Remove from heat and reserve.
Place chicken breasts on an oiled grill and barbecue 5 to 7 minutes per side.
Top chicken breasts with sauce and serve.
Suggestion
To give peanut sauce more intense flavour, add 1 mL(1/4 tsp.) curry powder and 1 mL (1/4 tsp.) ground coriander.
