Recipe ingredients
- 4 fresh boneless chicken breasts from 4 to 5 oz. (120 to 150 g) each
- Pine Nut Basting Sauce
- 1/2 cup (125 mL) pine nuts
- 3 Tbsp. (45 mL) extra virgin olive oil
- 1 medium tomato, chopped and seeded
- 1 Tbsp. (15 mL) chicken concentrate
- 2 Tbsp. (30 mL) white wine
- 1 Tbsp. (15 mL) Dijon mustard
Preparation
Preheat the barbecue to medium heat.
In a pan, brown the pine nuts for 1 minute in the olive oil.
Add remaining sauce ingredients, bring to a boil and simmer for 4 minutes. Remove from heat and reserve.
Place chicken breasts on a sheet of oiled aluminium foil.
Baste chicken breasts with sauce and barbecue 5 to 7 minutes per side.
Suggestion
Since pine nuts are expensive and keep for a short time (spooiling quickly), they can be replaced with toasted almond slivers.* We recommend Selection and Irresistibles products.
