Recipe ingredients
- 4 fresh boneless chicken breasts, 4 to 5 oz. (120 to 150) each
- Stuffing
- 8 large raw shrimp, shelled
- 4 white mushrooms, minced
- 1 Tbsp. (15 mL) fresh lemon juice
- 4 sprigs fresh thyme
- Salt and pepper to taste
Preparation
Preheat the barbecue to medium heat.
Make a pocket in each chicken breast, stuff with shrimp, mushrooms and thyme, drizzle with lemon juice and close with a toothpick or a small wooden skewer.
Place stuffed chicken breasts on the oiled grill and barbecue 5 to 7 minutes per side.
