Recipe ingredients
- 4 fresh bacon-wrapped chicken tournedos, 120 to 150 g (4 to 5 oz.) each
- Fruit sauce
- 1 cup (250 mL) canned fruit cocktail, not drained
- 1 tsp. (5 m) chicken concentrate
- 1/4 cup (60 mL) chopped celery
- 1 Tbsp. (15 mL) fresh grated ginger
- 1 Tbsp. (15 m) corn starch
- 1 Tbsp. (15 mL) cold water
- Salt and pepper to taste
Preparation
Preheat the barbecue to medium heat.
Place the tournedos on the oiled grill and barbecue 6 to 8 minutes per side. Keep warm.
Sauce
Put all sauce ingredients, except cornstarch and cold water, in a pan.
Bring to a boil and simmer for 5 minutes.
Mix cornstarch with cold water and stir into the sauce. Cook 1 to 2 minutes and remove from heat.
Top tournedos with sauce.
Suggestion
Add 10 mL (2 tsp.) of fresh rosemary to give fruit sauce more flavour.* We recommend Selection and Irresistibles products.
