Recipe ingredients

  • 2 Tbsp. (30 mL) extra light olive oil*
  • Juice of 2 oranges
  • 1 Tbsp. (15 mL) fresh chopped chives
  • 2 shallots, finely chopped
  • 4 filets of yellow pike 1/2 lb. (225 g), 1 in. (2.5 cm) cubes, each
  • 8 slices of lemon, unpeeled
  • 1 Tbsp. (15 mL) cornstarch*, diluted in a little water

Preparation

In a bowl, mix oil, orange juice, chives and shallots.
Marinate cubed pike filets about 20 minutes.
Thread cubes of pike on brochettes and barbecue about 4 minutes on each side.
Grill lemon slices on the barbecue. Set aside.
In a small pan, add cornstarch and heat marinade until it thickens.
Put brochettes on a platter and cover with marinade. Garnish with grilled lemon slices.
