Recipe ingredients

  • 2 cloves garlic, chopped
  • 1 Tbsp. (15 mL) extra virgin olive oil
  • 14 oz. (398 mL) diced canned tomatoes, drained
  • 1 Tbsp. (15 mL) chopped fresh basil
  • Salt and pepper to taste
  • 4 thin veal cutlets, 4 to 5 oz. (120 to 150 g)
  • 1 Tbsp. (15 mL) butter
  • 1 Tbsp. (15 mL) oil
  • 1 Tbsp. (15 mL) chopped fresh parsley

Preparation

In a pan sauté the garlic in the oil.
Add the drained tomatoes, basil, salt and pepper. Simmer 10 minutes.
During that time, cook the cutlets in butter and oil on medium heat, 2 minutes per side, to give them a nice colour. Set aside.
Serve the tomato sauce on the cutlets and sprinkle with fresh parsley

Suggestion

Use tons to handle the meat. This avoids piercing the meat and having the juices that give it its tenderness run out.
