Recipe ingredients

  • 4 whole oyster mushrooms
  • 2 medium onions, halved, blanched
  • 4 potatoes, halved, blanched
  • 4 beef tournedos
  • Maître d’hôtel butter
  • 1/4 cup (60 mL) butter
  • 1 Tbsp. (15 mL) lemon juice
  • 1 Tbsp. (15 mL) Worcestershire sauce
  • 1 tsp. (5 mL) honey
  • Salt and pepper to taste
  • 2 Tbsp. (30 mL) fresh chopped parsley

Preparation

In the mixer bowl, cream butter and mix in remaining Maître d’hôtel butter ingredients. Set aside.
In a frying pan, cook blanched vegetables until lightly browned. Mix with a small amount of Maître d’hôtel butter.
Cook tournedos, brushing with Maître d’hôtel butter as needed.
