Beef and Eggplant Brochettes

Recipe ingredients
- 1 lb (450 g) beef sirloin cut into 20 cubes
- 1 small onion cut in 10 pieces
- 1 green pepper cut in 10 pieces
- 10 cherry tomatoes
- 1 small eggplant, thickly sliced
- Marinade
- 1/4 cup (60 mL) plain yogurt
- 2 Tbsp. (30 mL) lemon juice
- 2 chopped garlic cloves
- 2 Tbsp. (30 mL) fresh ginger, chopped
- 2 tsp. (10 mL) paprika
- 1/2 tsp. (2 mL) Cayenne pepper
- 1/2 tsp. (2 mL) nutmeg
- 1/2 tsp. (2 mL) cumin
- 1/2 tsp. (2 mL) ground coriander
Preparation
Mix all the marinade ingredients in a food processor.
Marinate the beef cubes in a bowl in the refrigerator for 3 hours. Stir occasionally.
Assemble the beef cubes on skewers, alternating them with the vegetables.
Cook under the grill 8 to 10 minutes, to the desired degree of cooking.
Turn the brochettes often.
