Recipe ingredients
- 1 1/2 lb (675 g) boneless chicken breasts, cut in cubes
- 1 Tbsp. (15 mL) vegetable oil
- 1/2 tsp. (2 mL) ground ginger
- Ground black pepper to taste
- 1 unpeeled pear, diced
- 1 unpeeled red apple, diced
- 1 unpeeled green apple, diced
- 1 Tbsp. (15 mL) lemon juice
- 3 celery stalks, diced
- 1/2 cup (125 mL) coarsely chopped pecans
- 1/2 cup (125 mL) raisins
- Dressing
- 1/4 cup (60 mL) light mayonnaise
- 1/4 cup (60 mL) low-fat cottage cheese
- 1/2 tsp. (2 mL) ground ginger
- Pepper to taste
Preparation
Brown the chicken cubes in oil in a skillet and season with ginger and pepper.
Cut the cooked chicken in small pieces. Cool and set aside.
Mix the diced pear and apples in a large bowl, sprinkling with lemon juice.
Add the celery, pecans and raisins.
Add the chicken pieces to the salad.
Mix the dressing ingredients in another bowl.
Add the dressing to the salad and mix.
Cool in the refrigerator.
