Recipe ingredients

  • 2 Tbsp. (30 mL) vegetable oil*
  • 1 whole duck
  • 2 Tbsp. (30 mL) shallots
  • 1 cup (250 mL) white wine
  • 1 cup (250 mL) beef or chicken broth*
  • 1 Tbsp. (15 mL) green peppercorns
  • Salt to taste

Preparation

Heat the oil in a saucepan and sear the duck on all sides.
Add the shallots and cook until lightly colored.
Add the white wine.
Incorporate the broth and the green peppercorns.
Bring to a boil and simmer covered for one hour.
Adjust the seasoning. Serve.

Suggestion

Add a small amount of the brine from the peppercorns to enhance the flavor of the sauce.
