Rolled Crêpes with Leeks and Mushrooms

Recipe ingredients
- 1 bag (250g) sliced leeks
- 1 cup (250 mL) sliced mushrooms
- 3.6 oz (100 g) grated gruyere cheese*
- Béchamel
- 2 cups (500 mL) milk
- 2 Tbsp. (30 mL) butter*
- 2 Tbsp. (30 mL) flour*
- 8 thin crêpes
- Salt, pepper, thyme, nutmeg to taste
Preparation
In a small amount of water in a covered pan, cook leeks and sliced mushrooms 5 minutes; drain.
Make béchamel sauce, cool slightly.
Add leeks and mushrooms to the béchamel and a dash of wine (1oz) if you wish.
Preheat oven to 375°F (190°C).
Put rolled crêpes side by side in a dish.
Top with grated cheese.
Cook 15 minutes.
Suggestion
