Iced Pineapple with Chocolate Chips

Recipe ingredients
- 1 large pineapple
- 1 cup (250 mL) chocolate chip ice cream
- 2 small sprigs mint, garnish
Preparation
Slice the top and base from the pineapple; set aside.
Insert a round cookie cutter to the bottom of the pineapple; remove the flesh and cut out the stringy part (the centre) of the flesh with a coring knife; discard.
Slice the flesh in two; slice the first part in rounds and the second in chunks.
Replace the base of the pineapple and freeze 15 minutes.
Beat the chocolate chip ice cream and mix with the pineapple cubes.
Freeze the mixture and the pineapple top separately 2 hours.
Serve the pineapple in the centre of a plate; surround with the slices and garnish with sprigs of mint.
