Recipe ingredients

  • 2 Tbsp. (30 mL) butter
  • 2 x 8 oz (250 g) bags Les Cultures de Chez Nous sliced leeks
  • 5 medium potatoes, thinly sliced
  • 6 cups (1 1/2 L) cold water or light broth
  • 3/8 cup (100 mL) 35% cream
  • Chervil, thyme to taste
  • Ground salt and pepper as needed

Preparation

In a pan, melt butter, cooks leeks without browning. Salt.
Add potatoes and water.
Bring to a rolling boil 15 minutes. Remove from heat and set aside.
Add cream. Season.
Serve right away.
Add a few croûtons and some grated cheese to the soup when serving.
