Recipe ingredients
- 1 large onion, finely chopped
- 1 large carrot, finely chopped
- 1 rib celery, finely chopped
- 1 Tbsp. (15 mL) parsley, finely chopped
- 1/4 cup (60 mL) olive oil
- 6 Italian-style sausages, casings removed
- 1/2 cup (125 mL) red wine
- 1 x 28 oz (796 mL) can Italian-style chopped tomatoes
- 1 cup (250 mL) beef broth
- Salt and ground pepper
Preparation
Sauté onion, carrot, celery and parsley in oil five minutes.
Add raw sausage meat and brown, crushing well; cook ten minutes.
Add wine, allow to evaporate, add tomatoes.
Cook ten minutes, add broth, season, cover. Cook over low heat at least one hour.
Add more broth as needed.
Serve over hot pasta.
