Recipe ingredients
- 2/3 cup (160 mL) ricotta cheese
- 2/3 cup (160 mL) cream cheese*
- 1/3 cup (80 mL) softened unsalted butter*
- 1 garlic clove, crushed
- 1 Tbsp. (15 mL) finely chopped red pepper
- 1 Tbsp. (15 mL) finely chopped green pepper
- 3 Tbsp. (45 mL) walnuts, toasted and chopped*
- 2 Tbsp. (30 mL) finely chopped pitted black olives*
- 2 Tbsp. (30 mL) finely chopped stuffed green olives*
- 1 Tbsp. (15 mL) fresh basil
- 1 Tbsp. (15 mL) fresh parsley
- Salt and freshly ground pepper to taste.
Preparation
Using an electric mixer, mix ricotta and cream cheese, butter and garlic in a bowl.
Fold in remaining ingredients with a spoon.
Divide mixture among six ramekins lined with plastic wrap. Press mixture into ramekins and
cover with plastic wrap. Refrigerate for at least 12 hours.
Before serving, remove plastic wrap and unmould pâtés.
Suggestion
For ease of transportation, make the pâté in a 2 1/2 cup (625 mL) mould, unmould at the picnic and slice into individual servings.* We recommend Selection and Irresistibles products.
