Recipe ingredients
- 3 cups (750 mL) fresh spinach, trimmed, washed and spun or patted dry
- 2 cups (500 mL) hulled, halved strawberries
- 1/2 cup (125 mL) crumbled feta cheese*
- 1 red onion, sliced into thin rings
- Dressing
- 3 Tbsp. (45 mL) chilled orange juice*
- 3 Tbsp. (45 mL) Irresistible lemon juice*
- 3 Tbsp. (45 mL) olive oil*
- 1 tsp. (5 mL) liquid honey*
- 1 tsp. (5 mL) orange zest
- 1 garlic clove, chopped fine
- Freshly ground pepper to taste
- 1/3 cup (80 mL) toasted pine nuts.
Preparation
Gently mix spinach, strawberries, feta cheese and onion together in a large bowl.
Cover and refrigerate.
Put orange and lemon juice, oil and honey, orange zest, garlic and pepper in a small jar.
Screw the lid tight and shake vigorously until ingredients are thoroughly mixed. Refrigerate.
Before serving, pour dressing into salad and toss gently to coat all salad ingredients.
Sprinkle with toasted pine nuts and serve immediately.
Suggestion
Depending on personal preferences, spinach can be replaced with mixed greens and feta cheese with chopped avocado.* We recommend Selection and Irresistibles products.
