Recipe ingredients
- 4.5 lbs. (2 kg) red tomatoes
- 5 apples
- 5 pears
- 7 peaches
- 1 green bell pepper
- 3 onions
- 2 cups (500 mL) vinegar
- 1 lb. (450 g) brown sugar
- 1 1/2 tsp. (7 mL) salt
- 5 tsp. (25 mL) marinating spices
Preparation
Blanch the tomatoes 1 to 2 minutes. Let cool, then peel and cut into cubes.
Peel the fruits and vegetables and cut them into cubes.
Place the vinegar, brown sugar and salt in a large pot.
Heat to melt the sugar. Remove from the heat.
Put the spices in a cheesecloth pouch.
Add the fruits, vegetables and spices to the pot.
Bring to boiling and allow to simmer for 1 ½ hours, stirring often.
Remove the spice bag.
Sterilize glass jars for 20 minutes at 200°F / 95°C
Pour the ketchup into the jars, seal, and store in a cool, dry, dark spot 8 to 12 months.
