Recipe ingredients
- 20 chicken cubes
- Sufficient mushrooms
- Sufficient mango cubes
- Sufficient apple slices
- Sufficient raspberry vinegar
- Raspberry-Garlic Butter
- 6 garlic cloves, roasted and chopped
- 1/2 cup (125 mL) softened butter
- 1/2 cup (125 mL) fresh raspberries, crushed
- 1 tsp. (5 mL) raspberry vinegar
- To taste salt and ground pink pepper
Preparation
Prepare brochettes, alternating pieces of chicken and fruit. Set aside.
Mix raspberry-garlic butter ingredients together in a bowl.
Spread mixture on a sheet of plastic wrap and shape into a roll.
Chill 1 hour in the freezer.
Preheat barbecue to medium heat.
Brush chicken brochettes with raspberry vinegar.
Barbecue 8 to 10 minutes, turning brochettes occasionally.
Top each brochette with a slice of raspberry-garlic butter.
