Recipe ingredients

  • 12 oz (350 g) spaghetti*
  • 2 Tbsp. (30 mL) Irresistibles olive oil*
  • 2 cloves garlic, chopped
  • 3 green onions, chopped
  • 1/2 cup (125 mL) Portobello, coarsely chopped
  • 1/2 cup (125 mL) oyster mushrooms, coarsely chopped
  • 12 shiitake mushrooms
  • 8 fresh tomatoes, peeled, seeded, and coarsely chopped
  • 1 can (156 ml) tomato paste*
  • 1 pinch crushed red chilies
  • 2/3 cup (160 mL) fresh basil, chopped
  • Salt and pepper to taste
  • A few sprigs of basil for decorating

Preparation

Cook the spaghetti according to the manufacturer's instructions.
In a saucepan, sauté the oil, garlic, green onion and mushrooms.
Cook for 5 minutes or until the mushrooms are golden, and set aside.
Add the tomatoes, tomato paste, chilies and chopped basil, and cook for 10 minutes, stirring constantly. Puree the sauce in the blender. Add salt and pepper to taste.
Pour the sauce over the pasta, garnish with the mushrooms and decorate with the basil.
