Recipe ingredients
- 8-12 slices of bread
- 3 Tbsp. (45 mL) olive oil
- 3 garlic cloves, chopped
- 1 tomato, peeled, seeded and cubed
- 2 cups (500 mL) cubed pumpkin
- 1 Tbsp. (15 mL) chopped fresh basil
- 1 tsp. (5 mL) dried basil
- 1 Tbsp. (15 mL) chicken bouillon concentrate
- 3 Tbsp. (45 mL) grated fresh Parmesan
- 1 Tbsp. (15 mL) chopped parsley
- Salt and cayenne pepper to taste
- Sufficient olive oil
Preparation
Brush bread with olive oil and toast in skillet. Set aside.
In the same skillet, brown garlic in olive oil.
Add cubed tomato and pumpkin, basil and chicken bouillon concentrate.
Cook 10-12 minutes.
Add Parmesan, salt and cayenne pepper.
Mix thoroughly, remove from heat and adjust seasoning.
Spread on toasted bread and serve hot as first course.
