Recipe ingredients
- 2 avocados, pitted, peeled and diced
- 1 red pepper, cut into strips
- 1/4 cup (60 mL) finely chopped red onion
- 1/3 cup (80 mL) finely chopped coriander
- 1 Tbsp. (15 mL) lime juice
- 2 garlic cloves, minced
- Salt and ground black pepper to taste
- 1 Tbsp. (15 mL) vegetable oil*
- 1 lb (450 g) fresh chicken breast strips prepared in store Metro
- 2/3 cup (160 mL) grated orange cheddar*
- 6 tortillas, 8 in. (20 cm) in diameter.
Preparation
In a bowl, mix avocados, red pepper, onion, coriander, lime juice, garlic, salt and pepper. Refrigerate.
In a skillet, heat oil and cook strips until well browned.
Spread avocado mixture on tortillas, place chicken strips and cheese in the centre of each. Roll tortillas and serve with fries and crudités.
