Recipe ingredients
- Dressing
- 1/4 cup (60 mL) olive oil*
- 2 Tbsp. (30 mL) cider vinegar
- 2 Tbsp. (30 mL) apple jelly
- 3 Tbsp. (45 mL) chopped fresh coriander
- 3 garlic cloves, minced
- Salt and pepper to taste
- 1 Cortland apple, unpeeled and diced
- 1 Granny Smith apple, unpeeled and diced
- 8 plum tomatoes, seeded and diced
- 1 sweet green pepper, diced
- 5 scallions, chopped
- 1 baguette, sliced and toasted.
Preparation
In a small bowl, mix dressing ingredients together. Set aside.
In a large bowl, mix vegetables and apples together. Pour dressing over them, stirring to coat everything, and let stand at least 2 hours at room temperature.
Serve on toasted slices of baguette.
