Recipe ingredients
- Vegetable oil* as needed
- 1 lb. (450 g) stew beef
- 1/2 cup (125 mL) dry red wine
- 1 onion, quartered
- 1 garlic clove, minced
- 2 stalks of celery, cut into 1-in. (2.5-cm) pieces
- to taste carrots
- 1 28-oz. (796-mL) can seasoned whole tomatoes*
- 1/2 tsp. (2 mL) thyme
- 1 tsp. (5 mL) concentrated liquid beef bouillon
- 1 cup (250 mL) quartered mushrooms
Preparation
Preheat oven to 350ºF/180ºC.
In a large, lightly oiled skillet, brown meat on all sides.
Remove meat to an ovenproof dish.
Deglaze pan with wine and brown onions, garlic and celery for 2-3 min. Add remaining ingredients, except mushrooms.
Bring to a boil, stirring constantly. Season with salt and pepper and pour over beef. Bake covered.
Add mushrooms after 1 hour of cooking and bake for another 45 min.
Bake uncovered for the last 15 minutes.
Serve over noodles or garlic mashed potatoes.
This easy-to-make stew is terrific reheated!
