Recipe ingredients
- 1 medium onion, diced
- 1 cup (250 mL) diced carrot
- 1 cup (250 mL) diced celery
- 2 cloves garlic, minced
- 1–2 Tbsp. (15-30 mL) olive oil*
- 5 cups (1.25 L) vegetable stock
- 1 cup (250 mL) chopped green cabbage
- 1 cup (250 mL) diced potato *
- 1 cup (250 mL) diced zucchini
- 2 cups (500 mL) chopped fresh or canned tomatoes
- 1/4 cup (60 mL) macaroni noodles *
- 2 Tbsp. (30 mL) tomato paste *
- 1 tsp. (5 mL) dried basil
- 1/2 tsp. (2 mL) salt
- Pinch pepper
- 1/2 cup (125 mL) cooked white beans
- 2 Tbsp. (30 mL) chopped parsley
Preparation
In large saucepan, sauté onion, carrots, celery and garlic in oil over medium heat for 5 minutes.
Stir in stock, cabbage, potato, zucchini, tomatoes, macaroni, tomato paste, basil, salt and pepper.
Cover, reduce heat and simmer for about 15–20 minutes or until potato and macaroni are cooked.
Add white beans and heat through.
Adjust seasoning and garnish with parsley.

Minestrone, meaning ‘big soup' in Italian, is a favorite part of the Mediterranean diet. It generally contains beans, pasta and tomatoes.
