Recipe ingredients

  • 3 slices Yves Canadian Veggie Bacon, 1/4-in. (0.5-cm) dice
  • 2 Yves Tofu Wieners or Yves Veggie Wieners, cut in 1/4-in. (0.5-cm) cubes
  • 2 garlic cloves, finely chopped
  • 1 small onion, diced
  • 1 1/2 Tbsp. olive oil
  • 1 1/2 carrot, diced
  • 1 small turnip, peeled and diced
  • 1 celery stick, diced
  • 1 medium potato, peeled and diced
  • 1/3 cup (80 mL) French lentils or green lentils
  • 3 cups (750 mL) vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste

Preparation

In saucepan, sauté Yves Veggie Bacon, garlic, and onion in olive oil over medium heat for 2 minutes.
Add carrots, turnip, celery, and sauté over medium to low heat for another 3 minutes.
Add potato, lentils, broth and bay leaf, cover and bring to boil. Reduce heat and simmer for 45 minutes or until lentils are tender.
Add Yves Wieners and simmer 1 minute.
Season to taste with salt and pepper.
