  • 1 recipe Veggie Meatballs
  • 1 medium red onion, large dice
  • 3 cloves garlic, minced
  • 1 Tbsp. (15 mL) peeled minced ginger
  • 1 cup (250 mL) diced red bell pepper
  • 1 cup (250 mL) diced green bell pepper
  • 1–2 Tbsp. (15-30 mL) olive oil
  • 1 cup (250 mL) pineapple chunks
  • Sauce
  • 1 cup (250 mL) pineapple juice
  • 1 1/2 Tbsp. (22 mL) cornstarch or arrowroot powder
  • 1/3 cup (80 mL) brown sugar
  • 1/4 cup (60 mL) rice vinegar or white wine vinegar
  • 3 Tbsp. (45 mL) soy sauce
  • 2 Tbsp. (30 mL) tomato paste
  • 1 1/2 tsp. (7 mL) toasted sesame oil

Preparation

Make Veggie meatballs using recipe on www.metro.ca.
While meatballs are baking, sauté onion, garlic, ginger, bell peppers in oil in skillet over medium heat for 5 minutes or until soft.
In jar with lid, shake together pineapple juice and cornstarch until dissolved. Add sugar, vinegar, soy sauce, tomato paste, sesame oil and shake to mix sauce.
Add sauce to skillet and stir occasionally until thick.
Add pineapple chunks, meatballs and heat through.

Suggestion

Although this recipe calls for the Veggie Meatballs, you may substitute Yves Garden Vegetable Patties. Made with two patties, this recipe will feed two hungry adults. To prepare the patties, cut them into 1 in. (2.5 cm) square pieces and add to the recipe in step 5, in place of meatballs.
