Recipe ingredients
- 2 cups (500 mL) green beans
- 1/3 cup (80 mL) olive oil*
- 2 Tbsp. (30 mL) lemon juice
- 1 small clove garlic, crushed
- 2 hard-cooked eggs, peeled and chopped
- 8 small black olives
Preparation
Trim and string green beans; if slender, leave whole; if not, halve.
Immerse in a pot of boiling salted water and simmer about 5 minutes.
drain and rinse under cold water.
Pour olive oil in a large salad bowl, add lemon juice, garlic, eggs, olives and beans.
Mix well.
Suggestion
