Recipe ingredients
- 4 10-in. (25-cm) soft flour tortillas
- 1/2 cup (125 mL) Cajun or spicy tomato sauce
- 8 slices Yves Canadian Veggie Bacon
- 1/2 cup (125 mL) grated low fat or regular mozzarella or soy cheese
Preparation
Brush or spread about 2 Tbsp. (30 mL) of tomato sauce on each tortilla.
Starting at one end of tortilla, place 2 slices Yves Veggie Bacon next to each other, lengthwise.
Top with 2 Tbsp. (30 mL) cheese.
Start at same end of tortilla and roll tightly.
Refrigerate until ready to serve. If preparing a day ahead, wrap in plastic.
Place a piece of foil on a cookie sheet. Remove plastic wrap from tortillas and bake in 350°F/180°C oven until cheese is melted, about 12 minutes. Remove from oven and cut into 1 in. (2 cm) rounds.
Suggestion
This recipe is so simple, yet it is a wonderful combination of tastes and textures. It is best prepared ahead of time, and allowed to sit before serving, making it easier to slice.
