Recipe ingredients
- 2 cups (500 mL) grated celeriac
- 2 cups (500 mL) grated carrots
- Juice of one half lemon
- 1 large apple, unpeeled, diced
- 1 Tbsp. raisins
- 3 Tbsp. (45 mL) vegetable oil
- 2 Tbsp. (30 mL) white vinegar
- 1 tsp. (5 mL) prepared mustard
- 1/2 tsp. (2 mL) dried tarragon
- To taste, salt and pepper
Preparation
Put grated celeriac and carrots in a salad bowl, sprinkle with lemon juice and mix.
Add diced apples and raisins, mix again.
Mix all dressing ingredients with the mustard and pour over the salad.
Suggestion
Celeriac – celeriac can be used in all recipes for celery; it is eaten raw or cooked, after being washed and peeled. Use in salads, dips, braised, in soup, mashed with potatoes, etc. Cooked whole: 20 to 30 minutes in water. Cooked cut: 5 to 6 minutes in water.* We recommend Selection and Irresistibles products.
