Recipe ingredients
- 1/3 cup (80 mL) butter*
- 1/2 cup (125 mL) brown sugar
- 2 eggs
- 1 1/2 cups (375 mL) mashed ripe bananas
- 2 tsp. (10 mL) orange zest
- 1/4 cup (60 mL) fruit sauce
- 1 cup (250 mL) all-purpose flour*
- 1 cup (250 mL) whole-wheat flour*
- 1 1/2 tsp. (7 mL) baking powder
- 1 tsp. (5 mL) baking soda*
- 1 pinch of salt
- 1/2 tsp. (2 mL) ground cinnamon
- 1/2 tsp. (2 mL) nutmeg
- 1/3 cup (80 mL) walnut pieces*
- 1/3 cup (80 mL) raisins
- 1/2 cup (125 mL) milk.
Preparation
Preheat oven to 350°F / 175°C.
In a bowl, cream butter and sugar.
Add eggs one at a time, mixing after each addition.
Add bananas, orange zest and fruit sauce, mixing well.
In a bowl, combine flours, baking powder, baking soda, salt, spices, walnuts and raisins.
Add dry ingredients to banana mix, alternating with milk.
Transfer batter to a lightly greased loaf pan measuring 5 x 9 in. (23 x 13 cm).
Bake 60 min or until a toothpick inserted in the centre comes out clean.
Note: Perfect for breakfast, snacks or dessert with fresh fruit or ice cream.
