Recipe ingredients
- 1 pomelo, peeled, sectioned
- 1/4 cup (60 mL) unsweetened fruit juice*
- 1/2 lemon, sliced
- 2 sprigs rosemary
- 1 raddichio, shredded
- 1 bunch parsley
- 1 lb. (450 g) Nordic shrimp
- 1/4 cup (60 mL) finely chopped fresh dill
- Salt and pepper to taste
Preparation
Put pomelo sections in unsweetened fruit juice, lemon slices and rosemary in a bowl. Set aside 20 minutes.
Arrange raddichio leaves and parsley on serving dishes.
Garnish with pomelo sections.
Add shrimp and sprinkle with dill.
