Recipe ingredients
- 4 1/2 lb. (2 kg) red tomatoes
- 5 apples
- 5 pears
- 7 peaches
- 1 green pepper
- 3 onions
- 2 cups (500 mL) vinegar
- 1 lb. (450 g) brown sugar
- 1 1/2 tsp. (7 mL) salt
- 5 tsp. (25 mL) pickling spices
Preparation
Blanche tomatoes 1 to 2 minutes. Cool; peel, dice.
Peel and dice the fruits and vegetables.
In a large pot, put vinegar, brown sugar, salt.
Heat to dissolve sugar. Remove from heat.
Tie spices in a cheesecloth bag.
Add the fruits, vegetables and spices to the pot.
Bring to a boil and simmer 1hr. 30 min., stirring often.
Remove spice bag.
Sterilise glass jars (20 minutes at 225°F / 110°C).
Pour ketchup into jars, seal and store in a dry place.
