Recipe ingredients
- 1 bulb fennel or Chinese lettuce
- Dressing
- 1 clove garlic, crushed
- 1 tsp. (5 mL) vinegar
- 1/2 tsp. (2 mL) prepared mustard
- 1 Tbsp. (15 mL) olive oil
- 1/4 cup (60 mL) pineapple juice
- Salt and pepper to taste
- 6 oz. (180 g) smoked ham
- 4 slices pineapple
- 2 oranges, sectioned
- 4 stuffed green olives
- 4 black olives
Preparation
Slice fennel in juliennes.
Crush garlic and mix with vinegar, mustard, oil, pineapple juice, salt and pepper. Mix dressing with julienned fennel.
Cut ham, pineapple slices in chunks. Add to fennel with sliced olives.
Refrigerate and serve.
