Recipe ingredients

  • 2 fennel bulbs
  • 1 onion
  • 4 cloves garlic
  • 1/4 cup (60 mL) butter
  • 1/2 cup (125 mL) white wine
  • 2 cups (500 mL) Whipping cream
  • Salt and white pepper to taste

Preparation

Slice fennel in 2, remove leaves and heart.
Mince onion and chop garlic.
Brown fennel, onion and garlic in butter.
Add white wine and reduce by half.
Add cream and simmer until smooth.
Adjust seasoning.

Suggestion

Use fennel leaves to flavour fish or salad dressing.
