Recipe ingredients
- 1.5 lb. (675 g) lean ground veal
- 1/2 lb. (225 g) firm tofu, crumbled
- 2 eggs, beaten
- 3 carrots, grated
- 1 celery stalk, diced
- 1 onion, chopped
- 1 cup (250 mL) oatmeal*
- 1 cup (250 mL) grated Parmesan*
- 2/3 cup (160 mL) vegetable juice
- 1/2 tsp. (2 mL) dried basil
- 1/2 tsp. (2 mL) dried thyme
- 1/2 tsp. (2 mL) dried parsley
- Salt and pepper to taste.
Preparation
Preheat oven to 350°F/180°C.
In a bowl, mix all ingredients together.
Bake in a loaf pan for 75 min.
Suggestion
Serve meatloaf with tomato sauce for an interesting variation.* We recommend Selection and Irresistibles products.
