Recipe ingredients

  • 1.5 lb. (675 g) lean ground veal
  • 1/2 lb. (225 g) firm tofu, crumbled
  • 2 eggs, beaten
  • 3 carrots, grated
  • 1 celery stalk, diced
  • 1 onion, chopped
  • 1 cup (250 mL) oatmeal*
  • 1 cup (250 mL) grated Parmesan*
  • 2/3 cup (160 mL) vegetable juice
  • 1/2 tsp. (2 mL) dried basil
  • 1/2 tsp. (2 mL) dried thyme
  • 1/2 tsp. (2 mL) dried parsley
  • Salt and pepper to taste.

Preparation

Preheat oven to 350°F/180°C.
In a bowl, mix all ingredients together.
Bake in a loaf pan for 75 min.

Suggestion

Serve meatloaf with tomato sauce for an interesting variation.
